Jason Holbrook, owner of Eats and Treats, started his food truck from his brick-and-mortar shop in Ashland.
His offerings revolve around ice cream or fair food, so he tries to utilize items he already has to make different
“I went to a fall festival and just took a freezer and pop-up tent and we served the people there … and I just thought, ‘I think there is opportunity here,’ ” Holbrook says.
Holbrook’s beginnings were tentative. He purchased a trailer originally, but after taking it to Art in the Park and the Hartsburg Pumpkin festival the first year, he upgraded to a truck.
The biggest challenge is finding an event that is going to be profitable, he says. That, and marketing your business to get your name out there.
But serving different people and enjoying the event experience where he sets up makes it worth it. “It’s fast-paced, and I really like that,” Holbrook says. “Most of the time I don’t have anyone that is upset at their service -— most people are getting ice cream and they’re happy.”
