Bryan Maness, owner of Ozark Mountain Biscuit Co., was drawn to food truck culture and felt it would benefit the community. “It’s so nice to interact with every person and see them enjoy the food while you’re back there cooking,” Maness says. The menu is based on family recipes for foods like the ones Maness’s grandmother used to make at the Lake of the Ozarks when he was growing up. The fried chicken sandwich, which is a biscuit with collard greens, fried buttermilk chicken breast and a soft egg with sausage gravy on it, is on point with customers looking for a little comfort food. A close runner up is the Boss Hog, an open face biscuit with simmered greens, pulled pork, gravy and a fried egg.
Maness says the biggest challenges with owning a food truck are the weather and the heavy reliance on functioning equipment, but being outdoors and interacting with people make it worth it. “We travel all over the country doing music festivals during summer, and we are good at high-volume, fast-paced events,” Maness says. “So bringing that home and showing locals what we can do is always a fun time.”
