Flyover restaurant in Columbia is offering a new dish on the menu. According to a post on social media, this new item, trout livornese, is a pan-seared ruby trout with a sauce from Three Creeks Farm and forest tomatoes with toasted garlic, capers, kalamata olives and chili flakes served with herb-roasted red potatoes.

Unlike traditional restaurants, Flyover’s menu changes frequently, intending to provide the freshest, most seasonally-available, and locally-produced ingredients.
