Factors such as an increased number of people with celiac disease and the high incidence of autoimmune disorders fuel the gluten-free goods market expansion.

Government attempts to promote healthy foods and more marketing activity is expected to propel the industry forward, together with increasing spending on research and development aimed at extending the shelf life of gluten-free probiotics are fueling market growth.

However, the high price and difficulty of developing gluten-free products that are similar in texture, flavor and taste to their counterparts containing gluten somewhat restrict the U.S. gluten-free food market.
