Taproom Rebrands to Include New Menu

What once was known as Twain: Missouri Taproom is reopening as Twain: Missouri BBQ and Taproom inside voco The Tiger Hotel.

Laurie Williams, regional director of sales, says the soft launch of the newly rebranded restaurant has been going on this week, with the grand reopening scheduled for July 4. The focus of the new menu will be on all things Missouri, meaning Missouri made ingredients and products, as well as Missouri-based brands. “Twain is for everything Missouri based,” Williams says.

She says they saw a need for more good barbecue options downtown and decided to add food to the menu at Twain. And since the existing taproom focused on all beer, wine and spirits being Missouri made or based brands, it made sense to carry that focus into the food menu as well.

The new Twain will be open for lunch and dinner, with everything made in house. Williams says everything is smoked barbecue, with multiple types of meat available, including a smoked sausage created by Chef Jason Grubbs. Williams says one option they are particularly excited to offer is a “gotta try them all” option that feeds four to six people.

“We have gotten a really fabulous response from the community so far, especially for the lunch option,” Williams says.

Grubbs, the chef, says his love of barbecue has always been there, noting that his family comes from Mississippi and his great-grandfather even had a smokehouse. “I’ve put 15 years of my life into these barbecue recipes, and it feels like coming home,” he says.

Twain: Missouri BBQ and Taproom is accessible through the voco Tiger Hotel. It is open 11 a.m.-midnight Tuesday through Saturday, though the kitchen closes at 9 p.m. Tuesday through Thursday and at 10 p.m. Friday and Saturday.
